Fun Easter Cookies

Colorful and chewy cookies coming your way! These cookies are so simple to make! I always have people ask me how my cookies stay so soft and chewy! For so long, I have kept this a secret and I have FINALLY decided to share. These cookies are fun and easy for all ages!I like to make my cookies on the larger side and I like them to be in a perfect circle. I use a 1.5 tablespoon scooper to scoop the cookie dough and place on the pan. These scoopers make the perfect cookie shape! This made about 20 cookies and one tiny one for my son.

When I’m baking cookies I like to use a scooper to keep my cookies the same size and shape! I scoop the cookie and press the top of the cookies with the back of the scooper to flatten it out!

One of my favorite combinations of all time is Peanut Butter and Banana! I think it is the perfect spring taste! Peanut butter and banana cookies!? This mama must be going BANANAS! I promise you that you will love these cookies! They have been kid approved and taste tested with adults of all ages! I like to use the Reese’s Pieces Easter Peanut Butter Pastel Eggs , but you can totally switch out the candies to fit your mood!

Feel free to change the flavor of the Jell-O Pudding Mix! The cookies should look somewhat underdone when you take them out. They will finish baking while they cool.

Ingredients

  • 3.4 ounce package of Banana Cream Pudding Mix
  • 1 cup softened salted butter
  • 1/4 cup granulated sugar
  • 3/4 packed brown sugar
  • 2 large eggs
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 1/2 cup all-purpose flour

Directions

  1. Preheat the oven to 350 F. Line baking sheets with parchment paper or foil. Set them aside.
  2. In a large bowl, cream the butter and sugars.
  3. Beat in the instant pudding mix until smooth.
  4. Stir in the eggs and vanilla extract.
  5. Add the baking soda, baking powder, salt, and flour. Stir until combined.
  6. Scoop and drop cookies by 1 1/2 tablespoons onto your prepared baking sheets.
  7. Bake for 8-10 minutes. Be careful not to over-bake.
